Moroccan Cucumber Salad


4 Servings
2 cucumbers,peeled, seeded &
-- grate,d
1 T sugar
1 t vinegar
1 T olive oil
1/4 t salt
1/8 t za'atar*
1 cured black olives
Drain off excess liquid from the cucumbers & combine with the sugar,
vinegar, oil & salt. Crush the za'atar between your fingertips &
sprinkle over the cucumbers. Mix well with two forks, then chill.
Decorate with olives before serving. *An herb found only in the
Mediteranean, similar to marjoram which may be sustituted for it. Or
use thyme or oregano or a mixture of all three.

CHICKEN CASSEROLE

6 chicken breasts
2 onions
8 c. water (approximately)
3/4 loaf bread
Celery
Poultry seasoning
2 tbsp. melted butter
1 can cream of mushroom soup
1 can cream of chicken soup
Sharp cheese, sliced
Boil chicken breasts with 1 onion in approximately 8 cups of water until tender. Remove skin and bones and separate into pieces. Save chicken stock. Use 13 x 9 inch pan (sprayed with Pam). Tear small hunks of bread (about 3/4 of a loaf) and lay in bottom of pan. Slice 1 onion thin and lay on top of bread. Sprinkle celery, poultry seasoning on top. Lay chicken pieces on top. Melt margarine and pour over chicken pieces. Combine mushroom soup, cream of chicken soup and pour on top. Cover the top with sharp cheese sliced all over the top. Bake until done.

Baked Nutty Caramel Corn


Baked Nutty Caramel Corn
4 qt Popped corn
1/2 c Butter
1 c Brown sugar
1/4 c Corn syrup
1/2 ts Salt
1/4 ts Baking soda
1/2 ts Vanilla
2/3 c Nuts (almonds, pecans, peanuts, etc)
Pop corn and remove old maids. Spread corn in a large flat pan, and preheat in a 250-degree F. oven.
In a saucepan, melt butter, and stir in brown sugar, corn syrup and salt. Stir constantly until mixture
comes to a boil. Continue to boil without stirring for about 5 minutes (240 degrees F). Remove from heat,
and add baking soda and vanilla, stirring until foamy. If nuts are used, add them NOW, stirring until
heated through, and no longer clumped up.
Pour syrup mixture over preheated popcorn, and stir to coat. Bake for about 30 minutes, stirring 2 or 3
times to evenly distribute the coating.
Bake longer, about 60 minutes, for a more Cracker Jack taste. Cool, break up and store airtight

Cooked Meat Croquettes, French Recipe


4 Servings
MEAT MIXTURE
1/4 c onions,Chopped
1 T oil
2 c diced meat,ham, chicken,
-beef (or f),cooked
3 T celery,Minced
1 T green bell pepper,Minced
1 T fresh parsley,Minced
-(optional)
or 1 teaspoon oregano,Dried
1 t paprika
1/2 t salt
1/4 t black pepper
or pinch cayenne pepper
-(optional)
2 t lemon juice
2 T cracker meal,breadcrumbs or
- white
1 egg
ROLLING MIXTURE
2 c fresh bread crumbs
2 eggs
Oil -for frying
White Sauce - Medium or
-Thin,(see recipe)
Saut onions in oil until light golden and translucent. Combine all
ingredients except rolling mixture. Chill meat mixture. Beat the eggs
from the rolling mixture and roll croquettes in egg and then
breadcrumbs. Fry, turning so all sides brown. Serve with White Sauce
Or make White Sauce into Cheese Sauce or Brown Sauce.

Chicken Tagine, African Recipe

1 T olive oil
1 lg onion(s),finely chopped
3 garlic clove(s) (1,Minced
-tbs)
2 T ginger,minced
1 1/2 t turmeric
1 1/2 t cumin seeds,Ground
1 1/2 t coriander seeds,Ground
1 cinnamon stick
6 c (to 8 cups) chicken stock
2 T lemon juice
1/2 lb turnips,peeled cut into 3/4
- dice
1/2 lb carrots,peeled cut into 3/4
- dice
1/2 lb parsnips,peeled cut into
-3/4 dice
1/2 lb celeriac,peeled cut into
-3/4 dice,sprinkled with
1 T lemon juice
1 T pickled lemons (opt),Chopped
1/2 c raisins
1 salt and pepper
2 lb chicken breasts skinned and
-boned c,ut into 2 pieces
1/2 c chick-peas (opt),Cooked
1/3 c cilantro or,Chopped
-flat-leaf parsl,ey for gar
Heat the oil in a large casserole dish. Add the onion, garlic, ginger,
turmeric, cumin, coriander, and cinnamon stick. Cover over medium
heat for 3-4 minutes, or until the onion is soft but not brown. Add 6
cups of stock and the lemon juice, root vegetables, Pickled Lemons
(if using), raisins, salt and pepper. Simmer for 20 minutes, or until
the root vegetables are almost tender. Add stock as necessary to keep
the stew from drying out.
Just before serving, remove the cinnamon stick and stir in the
chicken and chick-peas. Simmer for 2-3 minutes, or until cooked.
Correct the seasoning, adding salt, pepper, and lemon juice to taste.
Garnish with cilantro or parsley and serve at once.

Franconia Root Vegetables, French Recipe

6 Servings
6 lg boiling potatoes,peeled
1 1/2 lb small carrots,trimmed and
-scraped
(or large carrots,cut
-carefully in
ovals)
1 lb small turnips,peeled,
-sprout end
(or large turnips,Trimmed
-trimmed
carefully into ovals)
12 small white onions,Boiling
-peeled
Drippings rendered from
-roast beef
1 t dried thyme leaves,crumbled
Salt and,Freshly Ground
-pepper,to taste
1/4 c parsley,Minced
Drop potatoes into a saucepan of cold, salted water. Over high heat
bring water to a boil, lower heat to medium, and cook potatoes 12
minutes. Drain, let cool for a few minutes, pat dry, and cut into
quarters (or halve horizontally and trim each half into ovals).
Meanwhile, drop carrots, turnips, and onions into boiling salted water
to cover. Lower heat to medium, cover, and cook until barely tender
(10 to 15 minutes, depending on size). Drain, instantly cool under
running water, and set vegetables aside.

Batata Bel Lamoun (Golden Potato Soup), African Recipe

6 Servings
1 lg carrot,sliced
3 ribs celery w/leaves,sliced
6 c water
1 T corn oil
2 cloves garlic,chopped fine
2 lb (abt 6) potatoes,peeled and
-,Sliced
2 t salt,or to taste
1/4 c lemon juice
2 cubes kosher chicken
-consomme,crum,bled
1/4 t turmeric,Ground
1. In a processor, puree carrot and celery with 3 cups of the water.
Into a large pan, pour puree and remaining 3 cups of water.
2. In a skillet, heat oil. Add garlic and stir-fry over low heat
for 2 minutes, or until garlic begins to change color. Add the
garlic to soup pan. Bring soup to a boil over moderate heat and skim
off and discard any foam that accumulates.
3. Add potatoes and cook over low heat for about 45 minutes. The
potatoes will begin to disintegrate. At this point, remove pan from
the heat and mash potatoes in pan with a hand masher or ricer. Bring
soup to a boil again, add salt, lemon juice, consomme cubes, and
turmeric.
4. Simmer over low heat for 1/2 hour longer, stirring frequently to
prevent potatoes sticking to pan. The soup will have turned a golden
color. Adjust salt and lemon juice, if a more intense flavor is desired.
Serve hot in a soup plate with as much rice as wanted. Makes 6 to 8
servings.
